Pineapple Banana Power Bread

Ingredients:

Dry Ingredients:

  • 2 cups oat flour (blend oats to make flour)
  • 1/4 cup almond flour
  • ½ cup tapioca flour
  • ¼ cup rice flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ tsp ground cardamom
  • ¼ tsp ground nutmeg

Wet Ingredients:

  • 1 ½ cups whole blended pineapple 
  • 2 medium ripe bananas, mashed
  • 2 flax eggs (2 tbsp ground flaxseed mixed with 6 tbsp water, let sit for 5 minutes)
  • ¼ cup maple syrup
  • ¼ cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • Zest of one lime

Mix-ins (optional):

  • ⅓ cup nuts of your choice
  • ⅓ cup shredded coconut
  • ⅓ cup cacao nibs
  • 1 tbsp chia seeds

Instructions:

1. Preheat the Oven:

Preheat your oven to 350°F. Grease a loaf pan and line with parchment paper.


2. Mix the Dry Ingredients:

In a large bowl, whisk together the oat flour, almond flour, tapioca flour, rice flour, baking powder, baking soda, salt, cardamom and nutmeg.

3. Prepare the Flax Eggs:

In a small bowl, combine 2 tablespoons of ground flaxseed with 6 tablespoons of water. Stir and let sit for 5 minutes to thicken.

 

4. Prepare the Wet Ingredients:

In a blender, blend the pineapple until smooth.

In another bowl, combine the blended pineapple, mashed bananas, flax eggs, maple syrup, melted coconut oil, vanilla and almond extracts, and the lime zest. Mix until well combined.

5. Combine the Ingredients:

Pour the wet ingredients into the dry ingredients. Stir until just combined. Be careful not to overmix. If using mix-ins, fold them into the batter to combine.

 

6. Bake:

Pour the batter into the prepared loaf pan. Smooth the top with a spatula.

Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

6. Cool:

Allow the loaf to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely

7. Serve:

Slice and enjoy for breakfast, pre-workout, or as an afternoon pick-me-up
