Ingredients:
Onion Jam:
- 1 tbsp vegetable oil
- 2 yellow onions, diced
- 1 cup water
- 2 tbsp white vinegar
- 2 tbsp honey
- 1 tsp fish sauce
- Kosher salt and freshly ground pepper to taste
Slider Sauce:
- ⅓ cup mayonnaise
- 2 tbsp Dijon mustard
- 1 tsp hot sauce
- 1 tsp white wine vinegar
- Kosher salt and freshly ground pepper to taste
- 1 tbsp chopped dill pickle
Burgers:
- 1 LB ground beef, preferably 80/20
- 2 tsp soy sauce
- 2 tbsp unsalted butter, softened
- 8 mini burger buns
- 1 tbsp vegetable oil
- Kosher salt and freshly ground pepper to taste
Procedure:
- For the onions: Add the oil and onions, and a pinch of salt to a saucepan over medium high heat. Add ½ cup water once the onions and bottom of the pan start to brown.
- Cook onions for 20 minutes, stirring frequently and adding water a little at a time to prevent burning when needed. Reduce heat to low and stir in remaining ingredients. The onions should be reduced, golden brown and jam-like in consistency. Season with salt and pepper and turn off heat.
- For the Sauce: Mix all of the ingredients together and set aside.
- For the burgers: Gently mix the soy sauce into the meat. Use a 2 oz scoop to portion out 8 equal balls. Gently flatten into 2 inch patties. Use the bottom of a teaspoon to make an indentation in the center of each patty. Keep cold until ready to cook.
- Cut the buns in half and butter each side. Heat a large cast iron skillet over medium-high heat and brown the buttered side of the buns until golden brown.
- Season each side of the patties with salt and pepper. Add the oil to the pan and add the patties. Cook until an instant-read thermometer inserted horizontally into center registers 160°F’.
- Assemble: bottom bun with 1 tsp sauce spread over it, patty, 1 tbsp onion jam, top bun with 1 tsp sauce spread over it. Enjoy!
