Greek Chicken and Whipped Feta Flatbread

Ingredients for the Flatbread Dough: 

  • 2 1/4 cups all-purpose flour
  • 1 packet (2 1/4 tsp) instant yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 3/4 cup warm water
  • 2 tablespoons olive oil

*Ingredients for the Whipped Feta Sauce:*

  • 1 cup crumbled feta cheese
  • 1/4 cup heavy cream (or half-and-half)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste

Ingredients for the Greek Chicken Toppings:

  • 1 boneless, skinless chicken breast, cooked and shredded
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup pitted green olives, halved
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon chopped fresh oregano
  • 1 tablespoon olive oil
  • Salt and pepper to taste


  1. Preheat your oven to 450°F (230°C). If you have a pizza stone, place it in the oven while preheating.
  2. In a mixing bowl, combine the flour, yeast, sugar, and salt. Gradually add warm water and olive oil while stirring. Mix until the dough comes together.
  3. Transfer the dough onto a lightly floured surface. Knead the dough for about 3-5 minutes until it becomes smooth and elastic.
  4. Divide the dough into two equal portions. Roll each portion into a thin oval or round shape, about 1/4-inch thick.
  5. In a food processor, add the crumbled feta, heavy cream (or half-and-half), olive oil, minced garlic, and fresh lemon juice for the Whipped Feta Sauce.
  6. Blend the ingredients until smooth and creamy, scraping down the sides of the food processor as needed. Taste the sauce and season with salt and pepper according to your preference.
  7. Spread the Whipped Feta Sauce evenly over the rolled-out flatbreads.
  8. In a small bowl, mix the shredded chicken with chopped oregano, salt, and pepper.
  9. Distribute the chicken, cherry tomatoes, red onion, and pitted green olives evenly over the flatbreads.
  10. Drizzle olive oil over the toppings and season with salt and pepper to taste.
  11. Slide the flatbreads onto the preheated pizza stone or place the baking sheet in the oven.
  12. Bake for about 10-12 minutes or until the edges are golden and the toppings are heated through.
  13. Remove the flatbreads from the oven.
  14. Slice and serve immediately!
