Ingredients:

For Herbed Salmon and Asparagus:
2 tablespoons olive oil
1 tablespoon fresh dill, chopped
Zest and juice of 1 lemon
1/2 teaspoon kosher salt
Pepper to taste
4 salmon filets
1 bunch asparagus, cut into long spears
Lemon slices for serving

For Spiced Fries
2 large sweet potatoes, cut into fries (keep the skin on)
1 tablespoon olive oil
1 teaspoon smoked paprika
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon kosher salt
1/4 teaspoon black pepper
Cooking spray

Instructions for Herbed Salmon with Asparagus and Spiced Fries

1. Preheat the Oven:
Preheat the oven to 425°F (220°C). You’ll start with the sweet potato fries as
they take longer and can cook at a higher temperature initially.

2. Prepare the Sweet Potato Fries:
Line a baking sheet with parchment paper. In a large bowl, toss the sweet
potato fries with olive oil, smoked paprika, cumin, garlic powder, onion powder,
kosher salt, and black pepper until evenly coated. Arrange the fries in a single
layer on the baking sheet, ensuring they’re not crowded. Lightly spray the fries
with cooking spray for extra crispiness.

3. Bake the Sweet Potato Fries:
Bake in the preheated oven for 15 minutes.

4. Lower the Oven Temperature for Salmon and Asparagus:
After the fries have been in the oven for 15 minutes, lower the oven
temperature to 375°F (190°C).

5. Prepare the Salmon and Asparagus:
Cover another sheet pan with parchment paper. In a small bowl, combine 2
tablespoons olive oil, chopped dill, lemon zest, lemon juice, 1/2 teaspoon
kosher salt, and pepper. Place the salmon filets and asparagus on the
prepared sheet pan. Spoon the herb mixture on top of each salmon filet.

6. Bake the Salmon, Asparagus, and Continue Cooking Fries:
Place the salmon and asparagus in the oven alongside the sweet potato fries.
Bake everything for an additional 20 minutes. Flip the sweet potato fries
halfway through this time.

7. Final Steps:
Check that the salmon reaches an internal temperature of 145°F (about 20
minutes total) and the asparagus is tender. The sweet potato fries should be
golden brown and crispy. Remove everything from the oven.
