Chicken Lettuce Wraps with Peanut Sauce

Ingredients:

Peanut Sauce:

  • 1/4 cup natural peanut butter
  • 2 tablespoons soy sauce (low-sodium)
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon grated ginger
  • 2-3 tablespoons water (to reach desired consistency)

Lettuce Wraps:

  • 2 cooked chicken breasts, sliced
  • 1 large cucumber, julienned
  • 1 large carrot, julienned
  • 1/2 cup chopped fresh cilantro
  • 8 large lettuce leaves (such as Bibb or iceberg)
  • 2 scallions, thinly sliced
  • 1 tablespoon sesame seeds, toasted for garnish

Instructions:

1. Make the Peanut Sauce:

In a small bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger. Add water gradually until you reach the desired sauce consistency.

2. Assemble Lettuce Wraps:

Lay out large lettuce leaves. Place chicken on each leaf, followed by cucumber and carrots

3. Serve:

Drizzle peanut sauce over the chicken and top with cilantro, scallions, and sesame seeds.
