Chicken Burger with Green Bean Fries

Sensational Chicken Burgers

Servings: 4

Active Prep Time:  15 minutes
Cook Time: 8 minutes 

Ingredients:

  • 1/2 pound ground chicken breast
  • 1/2 pound ground chicken (mixed light & dark)
  • 1/4 cup sun dried tomatoes
  • 1/4 cup chopped onion
  • 1/4  cup chopped fresh basil 
  • 1/4 cup chopped fresh flat italian parsley
  • 4 cloves garlic, minced
  • 1/2 tsp fine sea salt
  • 1/2 tsp freshly cracked black pepper
  • 4 whole wheat buns

Optional:

  • Tomato, sliced for burger assembly
  • Lettuce, for burger assmembly
  • Red onion, sliced for burger assembly

Instructions:

1. Prep the Patties:

Mix together all the ingredients and form 4 patties. 


2. Grill the Patties:

Grill each burger 3-4 minutes on each side.

3. Assemble the Burger:

Assemble each chicken party with a whole wheat bun, a dollop of guacamole, and your favorite burger toppings

Green Bean Fries

Servings: 5

Active Prep Time:  15 minutes
Cook Time: 25 minutes 

Ingredients:

  • 8oz fresh green beans, trimmed
  • 1 egg
  • 1 egg white
  • 1 dash of hot sauce 
  • ½ cup cornmeal
  • ½ tsp garlic salt
  • ⅛ tsp black pepper
  • 2 tbsp parmesan cheese, freshly grated 

Instructions:

1. Prep:

Preheat the oven to 425 deg F.
In a shallow dish, whisk together the egg, egg white, and hot sauce.
In another shallow dish, mix together the remaining ingredients.
Dip each green bean in the egg mixture and then lightly coat the cornmeal mixture. 


2. Bake the Fries:

Place the green beans on a baking sheet and bake for 25 minutes, until they are lightly golden. Serve with your favorite dipping sauce.

Cucumber Guacamole 

Servings: 6

Active Prep Time:  10 minutes

Ingredients:

  • 1 Hass avocado, pitted and cubed
  • 1 tomato, diced
  • 1 English cucumber, finely chopped 
  • 2 tbsp fresh cilantro, chopped
  • 1 tbsp lime juice 
  • 1 tbsp white wine vinegar
  • ½ jalapeño pepper, minced
  • ¼ tsp salt

Instructions:

1. Make the Guacamole:

Coarsely mash the avocado in a medium bowl. Add the tomato, cucumber, cilantro, lime juice, vinegar, jalapeño, and salt until well mixed.
