Mango Avocado Hand Rolls

Servings: 4 rolls

Prep Time: 20 minutes

Cook Time: 15 minutes rice cooking time

Ingredients:

  • For the Sushi Rice:
    • 3/4 cup sushi rice
    • 1/4 cup quinoa
    • 1 1/4 cups water
    • 2 Tbsp rice vinegar
    • 1 Tbsp sugar
    • 1/2 tsp salt
  • For the Hand Rolls:
    • 4 sheets nori, cut in half crosswise
    • 1 ripe mango, peeled and sliced into thin strips
    • 1 ripe avocado, sliced into strips
    • 1 English cucumber, julienned
    • 1/2 block extra firm tofu
    • Black or white toasted sesame seeds
    • Fresh cilantro
  • For Serving:
    • Soy sauce or tamari
    • Pickled ginger
    • Wasabi

Instructions:

  1. Make Sushi Rice: Rinse rice in a sieve until water runs clear. Combine rice, quinoa, and water in a pot. Bring to a boil, cover, reduce heat, and simmer 18 minutes. Remove from heat and steam 10 minutes. Stir vinegar, sugar, and salt in a bowl until dissolved, then fold into rice. Let cool slightly.
  2. Assemble the Hand Rolls: Place a half-sheet of nori shiny side down. Spread 1/4 cup sushi rice on one half. Layer tofu, mango, cucumber, avocado, and cilantro. Sprinkle with sesame seeds. Roll into a cone shape, sealing with a dab of water.
  3. Serve: Enjoy immediately with soy sauce, pickled ginger, and wasabi.

Banana Nut Butter Power Bites

Servings: 16 bites

Prep Time: 10 minutes + 30 minutes chilling

Ingredients:

  • 1 medium ripe banana, mashed (about 1/2 cup)
  • 1/2 cup nut butter
  • 1 1/2 cups old-fashioned rolled oats
  • 2 Tbsp ground flaxseed
  • 2 Tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon
  • Pinch of salt
  • Optional: 1 scoop protein powder

Instructions:

  1. Mix Ingredients: Mash banana in a bowl. Stir in nut butter, honey, vanilla, cinnamon, and salt. Add oats and flaxseed, mixing until it holds together (adjust with more oats or nut butter if needed).
  2. Roll and Chill: Roll into 1-inch balls, place on parchment, and chill for 30 minutes until firm.
